This sparkling wine was made according to the Méthode Traditionelle. Chardonnay grapes from the Lama vineyard are harvested very early, pressed with a basket press and fermented in used 500-liter barrels. The dry base wine is bottled with yeast and sugar and sealed. At the beginning the yeast ferments the sugar, then the yeast dies and gives fine brioche notes to the sparkling wine. The pressure is 6 bar, due to the long storage the perlage binds perfectly. After 14 months of aging on the yeast, the bottles are disgorged and closed again without dosage - brut nature.

Light straw yellow color. On the nose, yellow fruit aromas of apples, citrus and pears, underpinned by delicate yeasty notes of cookie and brioche. On the palate, very fine, elegant perlage and a striking, well-integrated acidity. Seems dense with a full body for sparkling wine, the combination of fruit and yeasty notes lingers in the finish.
This sparkling wine has a dense body with a very fine mousseux. As such, it goes very well as a food companion to dishes normally accompanied by white wines such as poultry and white meats.
