Estoras - Sauvignon Blanc
The grapes were harvested by hand in two runs to achieve greater complexity. The first part was grapes just before physiological ripeness. They give green aromas like green peppers and hay and have a lively acidity. The second run were fully ripe grapes, which bring in exotic flavors and fullness. The must was fermented at 15 to 19 degrees Celsius and aged for 4 months on the fine lees. Then filtered and filled into the bottle.
On the nose, a fine mix of gooseberries, elderflower and yellow pepper. Very fresh, aromatic style on the palate, the racy acidity harmonises with the creamy, full body. A rather mature representative of this variety, which is very animating to drink.
This Sauvignon Blanc is characterised by its intense aroma in combination with a racy acidity. It is therefore ideal with freshwater and sea fish, but also harmonises well with lighter starters or light poultry.
