Ausbau

The grapes were fermented spontaneously in a granite barrel with 30 days of maceration. 20 percent of the grapes were not crushed and fermented with the stems. After pressing, the wine was aged for another 6 months on the full lees in granite barrels. During this time, the wine spontaneously underwent malolactic fermentation. As the wine was not filtered, it shows a slight cloudiness.

Beschreibung

Medium golden yellow with a subtle cloudiness. Due to the partial whole cluster fermentation, the wine shows an intense fruitiness, ripe aromas of peach and mango, plus herbal spices of thyme and fennel. Subtle brioche notes from the ageing on the fine lees and a salty minerality, supported by the grainy notes from the granite barrel. Very dry on the palate with only 0.9 grams of residual sugar, fine, ripe tannin from the maceration period gives structure that is carried by the powerful body.

As a food companion, it is suitable for intensely spiced dishes due to its powerful style. The subtle tannin makes it a good alternative for light red wines.
